Ingredients
  • 1 onion, chopped
  • 1 lb (453 grams) ground or chopped chicken
  • 1 lb  (453 grams) dry lentils
  • 10 (2400 ml) cups water
  • 29 oz (822 grams) can crushed tomatoes
  • 2 cups (480 ml) prepared salsa
  • 1 teaspoon (5 ml) ground cumin
  • 1 teaspoon (5 ml) chili powder
  • 2 teaspoon (10 ml) salt
  • grated cheddar cheese for garnish

This recipe is courtesy of my mother.  Not only did she email me the recipe, she sent me the lentils and the chili powder so I could actually make it.  I could probably get the chili powder here, but would likely end up paying a hefty price for it, like the Mott’s applesauce I mentioned before. I’ve actually seen lentils here before, but when I went back to get them, they were gone.  Maybe Taobao has it.  I’ll have to check it the next time I make this.  And I will because it’s hearty and can feed my family of two for multiple days.

Instructions

1.  Either spray a 5 quart pot with nonstick cooking spray or pour in a tablespoon of oil.

2.  Chop up a medium sized onion and put it in the pot.

3.  Cook over medium-low heat for about five minutes until tender.

4.  Place uncooked ground or chopped chicken in the pot.

5.  Cook over medium heat until the chicken is mostly cooked.

6.  Add lentils.

7.  Add the water.

8.  Cover and simmer on low for 1 and 1/2 hours.  Stir occasionally.

9.  Add tomatoes, salsa, cumin, chili powder and salt.

10.  Stir ingredients together and continue to simmer for 15 minutes.

11.  Serve in a bowl and top it with some grated cheddar cheese.
